Anybody know the preferred method for towing a capri behind an rv and will this rack up miles on the odometer?

Idk about preferred, but if you purchase or rent a tow dolly you can drive the Capri right up on it and lash the front wheels to the dolly and once it is secured per the manufacturer's instructions (adding a brake and taillight bar to the trunk of the Capri), you can tow it all ove the country without racking up any miles. The front wheels record milage, not the rears. You wear rear tires and wheel bearings a lot more, but rotating the tires every so often depending on milage will even out the wear on the tires, and if the rear wheel bearings are in good shape, they often go the lifetime of the car. Just jack up the rear and check them every few months, they should not allow the tire to be pivoted with your hands at 3 and 9 o'clock on the tire with the wheel off the ground.

You might need a license plate for a dolly in your state, just check your DMV website to find out. Sometimes you can find a good dolly for a low price on Craigslist, but if you buy used, check the tires for dry rot.

That's my preferred and I believe the cheapest solution.  Magnetic lights are available from Harbor Freight for about $10.  Check to see if your state requires brakes on a towed vehicle, if so, the dollys available in your area will probably have them.  Brakes are a good idea whether they're required or not.  I like surge brakes.
