The ride height shouldn't be changed with tires/rims.  Leave that up to the suspension.  The overall tire diameter should be as close to stock as possible (unless you want to re-calibrate speedo, etc.)  Here is a nice conversion guide to play around with:

http://www.miata.net/garage/tirecalc.html

I'm not sure what a good +/- tolerance is but I've heard up to 1.5% is ok

just my $.02

use the wheel fitment guide over at Techcapri.com to help guide you on your wheel lug and offset choices.

the 215 tires may do some rubbing. as far as changing lugs, you could find a adaptor to make it more, or change the hub all together, but that might invole more pieces like new spindles and shafts.

215's will rub on the strut/spring tower. it will be too wide. The 205/40/17 is the recommended size with a 17x7 rim on the capri. I have about a fingers width in between the tire and strut. No rubbing..no problem.

You can also look at my setup with 17's and that same tire size, 205 40 17.  I think the recommended offset is like 43+mm, I know I'm running 40mm+ and it's real close to the strut tower and the, I think it's called the trailing arm? on the suspension, not sure.  These problems are only on the rear struts though.  My name is Cory when you go and look in the Gallery.

you can go as much as 17s to make them smooth with the body and have clearance. anything more then that, you will hit, or have to get wheel spacers or a style that will make the wheel stick out from the car's body.

oversize rims are not worth the hassle. sure they look good but they're so impractical. tyres will probably cost more than your car and the already limited comfort will be something you'll be telling your chiropractor about
i think the general rule is, rolling diameter is to remain stock (wheel and tyre combined) and rim can be within 2" larger (diameter) and 1" wider (tread). try to keep offset at standard and the stud pattern is a strange 4x114mm, more suited to older cars and RWDs. finding rims i actually liked took me months!
