I got cupholders that I mounted into the map pocket for my '93. They fold down to hold the cup and fold up when you aren't using them. You would still need a stock map pocket for that, however. On my 94, I simply got one of those black plastic 2-cup-and-cell-phone holders from auto zone and cut it in half. There is a long tab on the bottom of the assembly that slides right down into the map pocket and sits firm if there is a drink in it.
As for the console, I got the one that MidCo sells. After about 2 years of use, the plastic hinges weakened and the top came off. So I went to a junk yard and the console cover off a plymouth neon. It turned out to be gray, like the interior and a great fit - even has a tissue-holder inside the lid!
